• 2 10-oz. tuna steaks

  • Salt and pepper

  • 3 sprigs fresh thyme

  • 2 Tbsp. olive oil

  • Ground black pepper


  1. Set your Yedi Houseware immersion circulator to 105 degrees (F) and preheat the bath.

  2. Season fish with salt and pepper.

  3. Place fish, thyme and oil in a vacuum bag. Seal the bag. Immerse the bag in the bath.

  4. Cook for 45 minutes.

  5. Remove fish from bag, pat dry, and season with ground black pepper. Sear in a hot skillet, 30 seconds per side.
