Beef Filet Mignon
Salt and pepper
1 Tbsp. butter
1 sprig fresh thyme
1 Tbsp. olive oil
Set your Yedi Houseware Sous Vide to 138 degrees (F) and preheat the bath.
Season the filet with salt and pepper and place in a vacuum bag, along with a tablespoon butter and a small sprig of thyme.
Seal the bag. Immerse the bag in the bath.
Cook for approximately 1 hour.
Remove the bag from the bath and remove the filet from the bag.
Pat the meat dry with a paper towel and then season again with salt and pepper.
Heat olive oil or butter in a skillet, and then sear the filet on all sides.
Allow the meat to rest for a minute before slicing.
