1 teaspoon ginger powder
2 teaspoons chili paste
2 garlic cloves, minced
14 ounces pork chops, cubed
1 shallot, chopped
1 teaspoon coriander, ground
7 ounces coconut milk
2 tablespoons olive oil
3 ounces peanuts, ground
3 tablespoons soy sauce
Salt and Black pepper to sprinkle on top
In a bowl, mix ginger with 1 teaspoon chili paste, half of the garlic, half of the soy sauce and half of the oil, whisk, add meat, toss and leave aside for 10 minutes.
Transfer meat to your Yedi Houseware air fryer’s basket and cook at 400 degrees F for 12 minutes, turning halfway.
Meanwhile, heat up a pan with the rest of the oil over medium high heat, add shallot, the rest of the garlic, coriander, coconut milk, the rest of the peanuts, the rest of the chili paste and the rest of the soy sauce, stir and cook for 5 minutes.
Divide pork on plates, spread coconut mix on top and serve
