Sweet Potato Pudding

Ingredients:

·       1 Tbsp. butter

·       ¾ cup fresh milk

·       2 large eggs, whisked until frothy

·       ½ tsp. all spice powder

·       ½ tsp. cinnamon powder

·       3 large boiled sweet potatoes, peeled, roughly chopped

·       Coconut butter for greasing

·       ½ tsp. lemon zest

·       ½ cup brown sugar 

Directions:

  1. Lightly grease the insides of the Yedi Pressure Cooker with butter.

  2. Except for garnishes, pour remaining ingredients into the blender. Process until relatively smooth. Pour mixture into Yedi Pressure Cooker.

  3. Press: SLOW COOKER and LOW. Set the timer to 4 hours. Secure lid.

  4. After the cooking cycle, turn off the machine immediately.

  5. Scoop a small amount of pudding into bowls. Add a small dollop of whipped cream on top, with a pinch of chopped pecans. Serve immediately.
