Honey Turkey

Ingredients:

  • ¼ cup honey

  • 1 piece fresh jalapeno pepper, whole

  • 4 pounds turkey drumsticks, about 6 small pieces, rinsed, drained

  • 2 Tbsp. garlic, minced

  • ¼ Tbsp. dark soy sauce

  • ¼ cup red bell pepper, cored, deseeded, minced

  • ½ cup raisins

  • ½ cup dry sherry

  • ½ cup onion, peeled, minced

  • ½ cup water

  • ¼ cup light soy sauce

  • Directions:

  1. Place all the ingredients (except for the honey) into the Yedi Pressure Cooker.

  2. Press: SLOW COOKER and HIGH. Set the timer to 8 hours. Secure lid.

  3. After the cooking cycle, carefully extract the turkey drumsticks one by one. Place these directly on serving plates. Meat should be fall-off-the-bone tender.

  4. Press: SAUTÉ and HIGH. Cook until sauce thickens so that it lightly coats the back of a spoon.  

  5. Turn off machine. Stir in honey. Discard jalapeno pepper. Taste. Adjust seasoning if needed.

  6. Pour a small amount of sauce on each turkey drumstick. Serve with Java Rice if using.
