Banana Quinoa

Ingredients:

●      1 small piece dried cinnamon stick, whole

●      1 small piece vanilla pod, sliced lengthwise

●      1 cup coconut milk

●      3 cups water

●      1 cup uncooked quinoa, rinsed, drained

●      1 large ripe banana, sliced into half-inch disks, for garnish

●      ½ cup overripe bananas, mashed well

 Directions:

  1. Except for garnish and milk, pour ingredients into the Yedi Pressure Cooker.

  2. Press: SLOW COOKER and LOW. Set the timer to 8 hours. Secure lid.

  3. After the cooking cycle, stir in coconut milk. Discard cinnamon stick and vanilla pod. Taste. Adjust seasoning if needed.

  4. Scoop quinoa into bowls. Garnish with sliced bananas.
