Chicken and Pork Rice

Ingredients:

·       ¾ cup of mushrooms’ soaking liquid

·       1 large star anise, whole

·       1 pound dried shiitake mushrooms, soaked in 2 cups of warm water for 30 minutes

·       1 large star anise, whole

·       ¼ cup dark soy sauce

·       ¼ cup light soy sauce

·       Garnish

·       1 cup long-grained white rice, rinsed, drained

·       1 cup water

·       ¼ tsp. freshly cracked black peppercorns

·       ¼ tsp. turmeric powder

·       1 large garlic bulb, cloves separated and peeled

·       1 pound chicken thighs thigh fillets, cubed, rinsed well, drained

·       ½ pound pork belly, sliced into inch thick cubes, rinsed, drained

·       1 cup dried Chinese sausage, sliced into ½-inch thick disks

·       ½ Tbsp. brown sugar

·       ½ Tbsp. red pepper flakes

·       ¼ cup short-grained white sticky rice, rinsed, drained

Directions:

  1.  Except for garnishes, pour ingredients (including mushrooms’ soaking liquid) into the Yedi Pressure Cooker.

  2. Press: SLOW COOKER and LOW. Set the timer to 8 hours. Secure lid.

  3. After the cooking cycle, fork through rice to lose grains. Discard star anise.

  4. Pour flavored rice into bowls. Garnish each bowl with small amount of chives and garlic flakes just before serving.”
