Apple Quinoa

Ingredients:

·       ¼ cup store-bought roasted and shelled walnuts, lightly salted, roughly chopped

·       1 cup walnut milk

·       2 Tbsp. coconut butter, divided

·       3 cups water

·       4 Tbsp. maple syrup, add more if needed

·       2 Tbsp. chia seeds

·       1 small piece dried cinnamon stick, whole

·       1 small piece vanilla pod, sliced lengthwise
¾ cup uncooked quinoa, picked over but do not rinse

·       ½ cup raisins

·       2 cups apples, peeled, diced

Directions:

  1. Using a pastry brush, grease the insides of the Yedi Pressure Cooker with half of the coconut butter.

  2. Press: SAUTÉ and HIGH. Add in remaining coconut butter and quinoa. Stir-fry until quinoa releases a nutty aroma.

  3. Except for walnuts and milk, stir in remaining ingredients.

  4. Press: SLOW COOKER and LOW. Set timer to 8 hours. Secure lid.

  5. After cooking cycle, stir in walnut milk. Discard cinnamon stick and vanilla pod. Taste. Adjust seasoning if needed.

  6. Scoop quinoa into bowls. Garnish with chopped walnuts before serving.”
