VEGAN BUFFALO CAULIFLOWER NACHOS

Ingredients:

  • 2 cups cauliflower, cut into small florets

  • 2 tbsp. olive oil

  • 1⁄2 cup buffalo sauce

  • 1⁄4 pinto or black beans

  • 1⁄4 cup corn

  • 3 cups tortilla chips

  • 2 tbsp. chopped red onion

  • 1⁄4-1⁄2 cup vegan nacho cheese

  • Cilantro, for garnish

  • Scallion, for garnish

  • Pickled red onion, for garnish

  • Radish, for garnish (optional)

  • Guacamole, for serving (optional)

    Directions:

  1. In a bowl add the cauliflower and coat in the olive oil.

  2. Add to the basket of the air fryer and cook at 400°F for 10-12 minutes, shaking halfway through, or until deeply browned and crispy.

  3. Remove from the basket into a large bowl and coat in buffalo sauce.

  4. On a board or plate add a layer of your tortillas, then buffalo cauliflower, beans, corn, and onion.

  5. Pour nacho cheese over the top and add your garnishes.
