ROASTED CHICKPEAS
Ingredients:
- 1 can chickpeas (drained & rinsed - no sugar added) 
- 2 tsp. olive oil 
- 1 tsp. ground cumin 
- 1 tsp. ground coriander 
- 1 tsp. garlic powder 
- 1/8 tsp. ground ginger - Directions: - Put the rinsed beans into a medium mixing bowl and add all the rest of the ingredients. 
- Stir well to coat the beans in the oil and spices. 
- Pour the beans into the food basket of your air fryer. 
- Adjust the air fryer to a temperature of 370oF. 
- Cook for 12 minutes. 
- Pull out the basket and stir the beans. Put the basket back in and set again at 370oF. and cook for another 8 minutes. 
- Repeat the stirring process one more time, set for 370oF and cook for 1 minute longer. 
- If your beans are large they may need a little longer to get a good crunch. At this point, cook and stir in 1 minute intervals until they are cooked to your liking. 
- The main idea is to stir them every few minutes throughout the process. They should have a nice little crunch to them when they have cooled. 
- Packtheminsnackbagsandtakethemwithyouorstoretheminthe fridge until you are ready to eat them. Store in the fridge for up to one week. But be aware that you may have to roast them again for a minute or two to get them crunchy again if they've been in the fridge awhile.
