Salmon and Lemon Sauce
2 salmon fillets, boneless
Salt and black pepper to the taste
1 tablespoon olive oil
For the relish:
1 tablespoon lemon juice
1 shallot, chopped
1 Meyer lemon, cut in wedges and then sliced
2 tablespoons parsley, chopped
¼ cup olive oil
Season salmon with salt and pepper, rub with 1 tablespoon oil, place in your Yedi Houseware air fryer’s basket and cook at 320 degrees F for 20 minutes, flipping the fish halfway.
Meanwhile, in a bowl, mix shallot with the lemon juice, a pinch of salt and black pepper, stir and leave aside for 10 minutes.
In a separate bowl, mix marinated shallot with lemon slices, salt, pepper, parsley and ¼ cup oil and whisk well.
Divide salmon on plates, top with lemon relish and serve.
