Sweet and Sour Pork

Ingredients

  • 1/2 cup unsweetened crushed pineapple, undrained

  • 1/2 cup cider vinegar

  • 1/4 cup sugar

  • 1/4 cup packed dark brown sugar

  • 1/4 cup ketchup

  • 1 tablespoon reduced-sodium soy sauce

  • 1-1/2 teaspoons Dijon mustard

  • 1/2 teaspoon garlic powder

  • 1 pork tenderloin (3/4 pound), halved

  • 1/8 teaspoon salt

  • 1/8 teaspoon pepper

  • Sliced green onions, optional

  • Cooking spray

Directions

  1. In a small saucepan, combine the first 8 ingredients. Bring to a boil; reduce heat. Simmer, uncovered, until thickened, 6-8 minutes, stirring occasionally.

  2. Sprinkle pork with salt and pepper. 

  3. Spray the pork with cooking spray and place it in the Rotisserie Cage. 

  4. Manually set the temperature to 350F and the cooking time to 12 minutes. 

  5. Cook until pork begins to brown around the edges, 7-8 minutes.

  6. Take out and pour 2 tablespoons of sauce over pork. 

  7. Place the pork back in the oven and cook for the remaining time. 

  8. Let pork stand 5 minutes before slicing. Serve with remaining sauce. If desired, top with sliced green onions.
